Well, what a week this has been. On Saturday my right shoulder flared up and I have been in immense pain ever since. It could be adhesive capsulitis of shoulder (frozen shoulder), a trapped nerve or Impingement syndrome (trapped shoulder tendon). No matter what condition, the pain was so severe I could not do anything. Not. One. Thing. Totally dependent on others, having to ask for help….. Sleep deprived, unwashed…. Finally went to my GP yesterday for some strong painkillers and then to the physiotherapist and I am slowly getting better. So good in fact I’ve been preparing tonight’s dinner. Not so much preparing perhaps as throwing ingredients together.

Stews and casseroles are forgiving dishes, simple and tasty, and you can use almost anything. This recipe is based on what I had in the fridge between shopping trips, so not very much at all.


500 grams chicken breast
Half red onion, sliced
Half sweet red pepper, chopped or sliced
2 cloves of garlic, crushed
Half chorizo sausage, skin removed and sliced
350 or so grams heritage tomatoes, chopped in half or quarters
Pinch of mild chili powder and cumin
Splash of rose wine

1. Rinse the chicken and place in an oven proof dish.

2. Scatter the vegetables and chorizo on top of the chicken and add your spices, salt and pepper. Alternatively you can mix it in with the vegetables first.

3. Add a splash of wine, white or rose will do.

4. Cover with foil and place in the oven on medium heat for about an hour.

I will probably serve this with mashed potatoes and fresh spinach.
